
1. Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

Ingredients:
Spicy Sweet Mayo:
*1 cup light mayonnaise
*¼ cup coarse-grain mustard ¼ cup honey
*1 tbsp. prepared horseradish Hot pepper sauce, to taste 1 tsp. ground cayenne pepper Burgers
*1 ¼ pound ground turkey breast ½ large onion, grated
*1 jalapeno pepper, seeded and minced 2 tbsp. barbeque sauce
*2 tbsp. Worcestershire sauce ¼ tsp. liquid smoke flavoring 1 tbsp. steak seasoning
*1 tsp. dry mesquite flavored seasoning mix 1 tbsp. olive oil
*½ large onion, sliced
*5 burger buns
Cooking Directions:
1.Start by taking a bowl and mix together the mayonnaise, mustard, honey, horseradish, hot pepper sauce, and cayenne pepper. Cover it and cool in the refrigerator.
2.Mix ground turkey, grated onion, jalapeno, barbeque sauce, Worcestershire sauce, liquid smoke, steak seasoning, and mesquite seasoning in a large bowl.
3.Divide the turkey mix into 5 evenly sized patties.
4.Next, take a frying pan and heat it over medium-high heat. Drizzle it with olive oil. Stir in the onion and cook until softened and translucent, approx. 5 min.
5.Reduce the heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, approx. 15-20 min. more.
6.Cook the patties in a frying pan over medium heat for approx. 6 min. per side.
7.Assemble the burgers by taking the bottom bun, place the patty and top off with spicy sweet mayo and caramelized onions. Place top bun and serve.
2. Jerk Turkey Burgers with Mango Slaw
Prep:

Ingredients:
*1 pound ground turkey
*1 tbsp. jerk seasoning, plus more for sprinkling 1 small green apple, peeled and grated ½ cup finely chopped scallions
*¼ cup panko (Japanese breadcrumbs)
*Kosher salt and freshly ground pepper ¼ cup mayonnaise, plus more for brushing ¼ cup mango chutney, roughly chopped 3 cups shredded green
*cabbage
*1 carrot, shredded
*canola oil, for the grill pan
*4 burger buns
Cooking Directions:
1.Start by taking a grill pan and heat it to medium-high heat. Mix the turkey jerk seasoning, apple, 1/4 cup scallions and the panko in a bowl. Season with salt and pepper.
2.Divide the mix into 4 evenly sized patties and put them aside and refrigerate.
3.Whisk the mayonnaise and chutney in a large bowl. Add the cabbage, carrot and the remaining 1/4 cup scallions, season with salt and pepper and toss to coat.
4.Drizzle the grill pan with canola oil. Cook the turkey patties until browned and cooked through, approx. 4-5 min per side.
5.Brush the cut sides of the bun with mayonnaise and sprinkle with jerk seasoning.
6.Toast on the grill pan for about 30 sec.
7.Assemble the burgers by putting the patty on the bottom bun. Top off with slaw, top bun and serve.
3. Spicy Chipotle Turkey Burgers

*1 pound ground turkey
*½ cup finely chopped onion 2 tbsp. chopped fresh cilantro 1 chipotle chili in adobo sauce, finely chopped 1 tsp. garlic powder
*1 tsp. onion powder
*1 tsp. seasoned salt
*¼ tsp. black pepper
*4 slices mozzarella cheese 4 burger buns
Cooking Directions:
1.Start by heating a grill pan over medium-high heat. Lightly oil it.
2.Take a mixing bowl and add the turkey, onion, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper.
3.Divide the turkey mix into 4 evenly sized patties.
4.Cook the patties on the grill pan for approx. 4 min per side. Place the mozzarella slices on the patties 2 min. before they are ready.
5.Assemble the burgers with garnish of your desire and serve.
4. Southwest Turkey Burgers

Ingredients:
*8 slices turkey bacon
*1 1/3 pounds ground turkey breast 2 cloves garlic, finely chopped 1 large shallot, finely chopped 2 tbsp. chopped fresh thyme leaves or 1 tsp. dried thyme leaves 2 tbsp. chopped fresh cilantro leaves ½ small bell pepper, seeded and finely chopped 1 serrano or jalapeno pepper, seeded and finely chopped 2 tsp. ground cumin
*1-2 tsp. cayenne hot sauce
*2 tsp. grill seasoning blend Vegetable oil or olive oil, for drizzling
*½ pound deli sliced pepper jack cheese 1 cup sweet red pepper relish Red leaf lettuce
*4 burger buns
Cooking Directions:
1.Start by chopping the garlic and the vegetables.
2.Take a frying pan and cook the bacon over medium-high heat until crisp.
3.Discard the excess grease from the pan and return it to heat.
4.While the bacons cooks, take a bowl and mix the ground turkey, garlic, shallot, thyme, cilantro, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce and grill seasoning.
5.Divide the mixture into 4 evenly sized patties and drizzle them with vegetable oil.
6.Cook the patties on the frying pan at medium-high heat for approx. 5-6 min. on each side. Place sliced cheese over the patties in the last 2 min. of cooking and let it melt.
7.Assemble the patties in the buns and top with 2 slices of cooked, crisp bacon, sweet relish and red leaf lettuce. Put on the top bun and serve.
5. Black Bean Turkey Burgers with Salsa and Avocado

*4 large ripe tomatoes, diced 1 small onion, finely chopped 1 jalapeno pepper, seeded, deveined, and chopped 3 tbsp. chopped fresh cilantro 1 tbsp. olive oil

*½ can black beans, rinsed, drained, and lightly mashed 1 cup frozen corn kernels, thawed Patties

*Pinch of pepper
*Pinch of garlic powder

Cooking Directions:
1.Start by taking a large bowl, take all of the ingredients for the salsa and combine and stir them together. Cover the bowl and chill the salsa until ready for use.
2.Next, take a frying pan and place it over medium-high heat. In a bowl, combine the turkey, beans, tortilla chips, salt, pepper, garlic powder, onion powder, chile powder and cumin. Mix well.
3.Divide the turkey mix into 4 evenly sized patties.
4.Cook the patties until they are cooked through, approx. 5-6 min per side.
5.Transfer the patties to a paper towel-lined plate to drain.
6.Assemble the burgers by placing the patties on the bottom buns. Spoon salsa mixture on top and finally avocado slices and sour cream. Finish with the top bun and serve.
6. Asian Turkey Burgers

Ingredients:
*¼ cup bulgur wheat
*½ cup boiling water
*¼ cup rice wine vinegar
*1 tsp. sugar
*Kosher salt and freshly ground black pepper ¼ seedless cucumber, sliced 1/8- inch thick ¼ small red onion, thinly sliced ¼ cup plain low-fat yoghurt 1 tsp. chile garlic sauce
*12 oz. lean ground turkey
*2 tbsp. hoisin sauce
*2 scallions, chopped
*1 tsp. grated ginger
*1 clove garlic, grated
*2 tbsp. chopped cilantro, plus ¼ cup whole leaves 2 tsp. vegetable oil
*4 burger buns
Cooking Directions:
1.Start by taking a bowl, add the bulgur and the boiling water. Cover with plastic wrap and set aside until the bulgur is tender, approx. 45 min. to 1 hour.
2.Meanwhile, take a bowl and whisk the vinegar and sugar with a generous seasoning of salt and pepper until dissolved. Add the cucumber and onion mix well and set aside to marinate for approx. 30 min.
3.In a separate bowl mix the yoghurt and chile garlic sauce. Season with salt and pepper and set aside.
4.Drain the bulgur and add the turkey, hoisin, scallions, ginger, garlic and chopped cilantro and mix until just combined.
5.Divide the turkey mix into 4 evenly sized patties.
6.Take a frying pan and put it over medium heat until very hot. Lightly drizzle both sides of each patty with oil and place on the frying pan. Cook the patties until they are cooked through, approx. 3-4 min per side.
7.Drain the pickled vegetables and mix with the whole cilantro leaves.
8.Assemble the burgers by spreading some spicy yoghurt sauce on the top and bottom of each bun and top with a patty and some pickles.
7. Apple Maple Turkey Burgers with Maple-Dijon Sauce

*¼ cup mayonnaise
*1 tbsp. Dijon mustard
*2 tbsp. real maple syrup Patties

*½ cup chunky applesauce 1 tsp. poultry seasoning 2 tbsp. real maple syrup ½ tsp. salt

Cooking Directions:
1.Start by taking a grill pan and place it over medium heat. Lightly oil it, when ready to start cooking.
2.To prepare the Maple-Dijon Sauce take a bowl, add the mayonnaise, Dijon mustard, 2 tbsp. maple syrup, stir and mix well. When mixed, set aside.
3.To prepare the patties take a bowl and mix together the turkey, bacon bits, chunky applesauce, poultry seasoning, maple syrup, salt and pepper. Divide the turkey mix into 4 evenly sized patties.
4.Cook the patties on the grill pan for approx. 5-6 min. per side.
5.Assemble the burgers by placing the patty on the bottom bun with traditional burger condiments and a dollop of maple-Dijon sauce. Finish with the top bun and serve.
8. Tex-Mex Turkey Burgers with Avocado Mayonnaise

Ingredients:
*1 ¼ pounds lean ground turkey 2 cloves garlic, grated
*2 tsp. hot smoked paprika Kosher salt and freshly ground pepper 1 avocado, halved
*3 tbsp. mayonnaise
*1 lime, juiced
*1 tbsp. vegetable oil
*4 slices pepper jack cheese Shredded lettuce
*4 burger buns
Cooking Directions:
1.Start by taking a bowl. Add the turkey, garlic, paprika, ¾ tsp. salt and a few grinds of pepper. Mix well.
2.Divide the turkey mix into 4 evenly sized patties, cover and set aside.
3.Combine ½ avocado, the mayonnaise, lime juice and ¼ tsp salt in a bowl, mash until smooth. Thinly slice the remaining ½ avocado and season with salt and pepper. Set aside for topping.
4.Next, take a frying pan and heat it over medium-high heat and drizzle it with vegetable oil. Add the patties and cook until browned, approx., 3-4 min per side.
5.Place a slice of cheese on top of each patty, when there is about 1 min. remaining and let the cheese melt.
6.Meanwhile, toast the buns, spread the avocado mayonnaise on the cut sides.
7.Assemble the burgers by placing a patty on each bun. Top off with lettuce, the sliced avocados, condiments of your desire. Finish off with the bun top and serve.
9. Turkey Burgers with Prosciutto and Melon

Ingredients:
*2 pounds ground turkey
*2 tbsp. grated onion
*2 cloves minced garlic
*4 tbsp. chopped basil leaves, divided 1 tsp. seasoned salt
*½ tsp. black pepper
*2 tbsp. olive oil
*6 slices prosciutto
*½ cup mayonnaise
*2 tsp. lemon juice
*6 slices smoked provolone 6 slices cantaloupe
Cooking Directions:
1.Start by taking a grill pan and put it over medium-high heat.
2.Next, add the ground turkey, grated onion, garlic, 2 tbsp. basil, seasoned and salt and pepper.
3.Mix well. Divide the turkey mix into 6 evenly sized patties. Set aside.
4.Drizzle the grill pan with olive oil and place the patties on the grill pan.
5.Cook the patties until cooked through, approx. 5-6 min. per side.
6.While the patties are cooking, preheat a frying pan on medium high heat. Place prosciutto slices on the pan and cook until crispy. Set aside.
6.When the patties are cooked, top with provolone and heat until melted. Transfer the patties from the grill pan to a plate. Cover with foil to keep them warm. Cut cantaloupe slices to fit the burger buns.
7.Assemble the burgers by spreading mayonnaise on both cut sides of the bun. Place a patty on the bottom bun. Top the patties with slices of prosciutto and cantaloupe. Finish off with the top bun and serve.
10. Turkey Bacon Double Cheese Burgers with Fire Roaste Tomato Sauce

Ingredients:
*1 tbsp. Extra-virgin olive oil, plus extra for drizzling 8 slices turkey bacon
*2 ½ pounds ground turkey breast
*2 green onions, finely chopped
*A handful cilantro, finely chopped 1 tbsp. chipotle chili powder
*1 ½ tsp. smoked sweet paprika
*Salt and freshly ground black pepper 2 tsp. zest and the juice of 2 limes 1 red onion, chopped
*1 tbsp. Worcestershire sauce
*2 tbsp. brown sugar
*1 can fire-roasted diced tomatoes, lightly drained 2 rounded tbsp.
grainy mustard
*8 slices pepper jack cheese
*4 burger buns
Cooking Directions:
1.Start by taking a frying pan and heating it over medium-high heat. Drizzle it lightly with olive oil and add the turkey bacon.
2.Cook until crisp, approx. 3 min. on each side.
3.While the bacon cooks, combine the turkey breast, green onions, cilantro, chipotle, paprika, salt and pepper, lime zest and juice. Mix the turkey breast with seasonings and divide the turkey mix to 8 evenly sized patties.
4.Cook the first 4 patties in the pan for approx. 3-4 min on each side. Remove the patties from the pan and place onto a plate and loosely cover with foil to keep warm.
5.While the first batch of burgers cook heat 1 tbsp. oil in a sauce pot over mediumhigh heat. Add onions and soften 3-4 min, season with salt and pepper and then add Worcestershire sauce, brown sugar, tomatoes, and mustard.
6.Let the sauce cook on low.
7.Add the second batch of burger s to the frying pan and cook for approx. 3-4 min. on each side. Top with a slice of cheese and 2 pieces of bacon. Loosely cover the pan with foil to let the cheese melt, approx. 1 min.
8.Assemble the burgers by placing a patty on the bottom bun, add some fire roasted tomato sauce and then another patty. Finish it off with the top bun and serve.
